Roast Beef & rice with nettles

For a pampering weekend with friends coming over I wanted to cook something special, so I’ve decided to do roast beef & rice with nettles ( cause it’s their season).

Ingredients:

1 kg quality topside of beef

2 carrots

1 bulb garlic

rosemary

olive oil

sea salt

freshly ground black pepper

For the rice :

1 liter soup or water

2 tablespoons olive oil / butter

1 large onion, peeled and finely chopped

600 g risotto rice

250 ml dry white wine

400 gr nettles

sea salt

saffron

pepper

some capers for decoration

How to do the beef:

Pile all the veg, garlic and herbs into the middle of a large roasting tray and drizzle with olive oil. Drizzle the beef with olive oil and season well with salt and pepper, rubbing it all over the meat. Place the beef on top of the vegetables.

Place the roasting tray in the preheated oven. Turn the heat down immediately to 200° and cook for 1 hour for medium beef. If you prefer it medium-rare, take it out 5 to 10 minutes earlier. For well done, leave it in for another 10 to 15 minutes.

How to do the rice:

Meanwhile the beef is in the oven, we start preparing the rice. First of all we wash the nettles and put them to boil with salt. Put the olive oil/ butter in a separate large pan, add the onion and cook very gently for about 15 minutes, without coloring, until soft. Add the rice and turn up the heat. Quickly pour in the wine, keep stirring all the time until the alcohol it has evaporated, leaving the rice with a lovely perfume. Finally add the soup and the nettles sliced and leave 30 – 40 minutes on low heat and stir.

Serve with a glass of wine and joy!
